    Serve a special Valentine's dinner

    Shrimp Valentine

    Sauce

    1/2 stick unsalted butter
    2 garlic cloves, finely chopped
    7 small to medium ripe tomatoes; grated
    1-2 tablespoons Chipotles in Adobo sauce (warning: use sparingly as these peppers are spicy hot. You can just use the sauce and not add any of the peppers)
    1/4 cup Crema Mexicana
    salt and pepper to taste

    Shrimp

    2 tablespoons unsalted butter
    2 garlic cloves, finely chopped
    1 pound large shrimp, peeled and deveined
    1/4 cup Tequila Reposado
    salt and pepper to taste

    To make the sauce:

    Heat butter in a large skillet over medium heat. Once the butter is melted, add the garlic and cook until it is fragrant, about 1 minute. Next, add the tomatoes and chipotle pepper and simmer for about 5 minutes. Add the Crema Mexicana and whisk into the sauce until thoroughly combined. Season to taste. Remove from heat.

    To make the Shrimp:

    Heat butter in a large skillet over medium heat. Add the garlic and cook for a couple of minutes. Add the shrimp and tequila and cook, stirring constantly, until pink, about 3 to 4 minutes. Add the sauce and simmer for a couple more minutes.

    Serve over white rice.
