Impress your guests with these yams

Fall is here and turkey day is only two weeks away. Chef Heather from Peggy's On The Green shares some of her favorite dishes. Don't want to do the cooking yourself? Peggy's is open on Thanksgiving Day with all your favorites.

CANDIED YAMS

Ingredients:
4 Pounds of yams, ( can be sweet potatoes)
1/2 C.unsalted butter
3/4 C.granulated sugar
3/4 C. packed light brown sugar
1/4 C. heavy cream
1 Tbs. vanilla extract
1 tsp. ground cinnamon
1 tsp. kosher salt
1/4 tsp. ground nutmeg

Optional:

1/4 ground ginger
pinch cayenne
mini marshmallows

1.) Preheat oven to 350. layer yams in a lightly buttered 13 X 9 inch baking dish.

2.) Melt butter in a small sauce pan, add sugar and stir to combined. stir in cream, and cook until mixture comes to a simmer. (approximately 5-7 minutes) remove from heat, and add vanilla, cinnamon, salt, and nutmeg.

3.) Pour mixture evenly over yams and cover.

4.) Bake covered for about 40 min. Uncover, stir gently, and cook until fork tender, ( about 20 min.) If you are using marshmallows, add and return to the oven until golden brown.
