It's our family recipe show and the amazing Mary Martini is definitely part of our Living family! She is making braised short ribs with her husband John. Watch to see them work their magic in the kitchen and see below for the recipe so you can try this savory dish at home.
Braised Short Ribs
6short ribs, about 2-3 pounds
1/4cup olive oil
1cup yellow onion, diced
1/2cup carrot, peeled & diced
1/2cup celery, diced
2cups red wine
4cups good beef or chicken stock
1tablespoon juniper berries
1teaspoon black peppercorns
Heat a heavy pot and add the olive oil.
Season short ribs with salt and pepper.
Add the short ribs and sear on all sides. Remove and set aside.
Add more olive oil if necessary, and then add the onion, carrot and celery. Sauté until the vegetables are golden brown, about 10-12 minutes. Add the wine and cook a minute or two. Add the short ribs and stock, bring to a boil. Add the juniper berries, peppercorns and bay leaves.
Place in a 300-degree oven for 3 hours. Let rest 20 minutes.
Remove the short ribs and strain the broth into a saucepan. Cook to reduce and thicken. Serve over pasta, polenta or potatoes Serves 6
