Shrimp with Garlic: An easy weeknight dinner recipe that the family will love

Shrimp with Garlic

Getting the whole family around the dinner table can be tough. Trying to do that during the week can feel impossible. Finding time to cook a good meal is the first obstacle, but not with this recipe. Shrimp al Ajillo/Shrimp with Garlic

1 ½ lbs shrimp; shelled and deveined with the tails
¼ cup thinly sliced garlic (garlic rounds or chopped)
1 ¼ cups extra virgin olive oil
1 small dried hot chile, such as guajillo pepper or chile de arbol; seeded and chopped *Warning: wear gloves when doing this)
½ cup minced parsley
2 Tbsp. dry cooking sherry
1 tsp. finely grated lemon zest
White rice or pasta or with crusty bread.

Place the shrimp in a large bowl and toss with 1 teaspoon of kosher salt and set aside for 10 minutes.

Separately, in a large skillet, combine the garlic and olive oil and cook over low heat until the garlic is fragrant and begins to brown, 8 to 10 minutes. Next, add the chile and cook, stirring, until fragrant, about 30 seconds.

Add the shrimp to the skillet and cook over moderately low heat for about 5 minutes. Add the parsley, sherry, lemon zest, salt and then stir everything together. Remove from the heat and allow the shrimp to finish cooking, about 3 or 4 minutes.

Serve shrimp over white rice or pasta or serve with crusty and toasted bread.
