Soup Recipe
1 russet potato
4 medium gold potatoes
1/2 medium onion
32 oz chicken broth
8 oz Mexican Creama
12 oz heavy cream
2 cups shredded cheddar cheese
2 cups water
Peel and small dice potatoes, and to large pot, add chicken broth and 2 cups of water, grate onion over potatoes, bring to boil. Turn down to gentle boil till potatoes start to fall apart. Break up potatoes with masher in liquid. Once potatoes are broken up add heavy cream, and Mexican creama. Bring back to a soft boil and add cheddar cheese stir till melted, simmer till soup is thick and warm through.
Top or garnish with chopped green onions, bacon and jalapeños.
