RECIPE: Spice up your breakfast, lunch and dinner with this Rustic Ranchera Sauce

Rustic Ranchera Sauce

2 tablespoons vegetable oil
½ small onion, quartered and thinly sliced
2 to 4 serrano chile, cut into thin strips
8 to 10 small tomatoes, halved and grated on the large holes of a box grater
Salt and pepper to taste

Heat the oil in a skillet over medium heat. Add the onion and chile and cook until the onion is softened, about 3 to 4 minutes. Add the tomatoes and bring to a simmer for 3 to 5 minutes. Lower the temperature and gently simmer for another 5 minutes (if the mixture looks dry, stir in a bit of water). Remove from heat and enjoy!
