Mom's special mac 'n cheese

1/ 12 oz. Package Large elbow Macaroni
4 Garlic cloves
1 tablespoon and 2 teaspoons salt; divided
7 small to medium ripe tomatoes
1/2 stick margarine
3 cups American cheese; grated
Prepare macaroni by boiling in water with garlic and 1 teaspoon salt. Separately begin to boil the tomatoes. They are ready when skin begins to break on tomatoes. Remove the water, peel skin off tomatoes, mash tomatoes using a potato masher and add 2 teaspoons salt. Next add the margarine, boil for approximately 10 to 15 minutes over medium heat and then add the macaroni that has been drained. Mix together. While still on medium heat begin to add cheese until completely melted. You can add as much or as little cheese as you like. Remove from heat.
This can be served as a side dish or a meal in itself.
